The exact origin of Cantueso is unknown, although it possibly dates back to Arab alchemists, who meticulously studied the extraction of its natural aromas. Later, in the mid-19th century, a liqueur was produced by distilling the stem and flower of the Cantueso plant in copper stills. The resulting product was then transferred to oak barrels for aging.
Our Cantueso Serpis is obtained by distillation and maceration of the flower and peduncle of the cantueso plant in neutral alcohol of agricultural origin, with an alcoholic degree of 30% by volume, with a minimum sugar content of 100 grams per liter, expressed in invert sugar, and with a dark transparent color.
The Cantueso or “Thymus moroderi” used to make Cantueso Serpis comes from the mountains of Alicante. It is a plant that grows in the driest areas of thyme thickets, in soils rich in salts, especially calcium sulfate and sodium chloride. It is harvested at peak bloom, in May and June, and is pruned or cut to collect the flowers and their peduncles, never the woody parts.
It is then washed and air-dried in dimly lit places and stored in cool, dry, dimly lit places until it is used.
All of this gives Cantueso Serpis that characteristic flavor of the distillation of the cantueso, velvety and at the same time warm, with a very denoted wild aroma, typical of the cantueso flower. For its perfect tasting, serve in a small glass at a temperature of 2% to 4%.
